Recipe: Steamed Beef Dumplings

We just ate our first dumplings almost a year ago and it has not taken long before it turned into one of Kai’s favorite foods.

At many of the Dumpling places you can see the cooks preparing them, so after stopping at every dumpling place to see what they are doing, we found it time to try and make dumplings ourselves. From scratch of course.

The dumpling dough is surprisingly easy to make,  plain flour and just add water.

Ingredients dumpling dough:

  • 2 cups/280 gram plain flour
  • 2/3 cup/160 ml boiling water
  • 1/4 cup/60 ml cold water

Step 1: Add the water to the flour, it remains a bit sticky

Step 2) Knit the dough on a floured counter until it is not sticky anymore

Step 3) Make little balls and roll them very flat. Our flour balls were about 12 gram each. Use enough flour otherwise they stick

Ingredients beef dumplings filling:

  • 350 g beef mince
  • 1 cup finely chopped buk choy/Chinese cabbage
  • 1/2 carrot, grated
  • 150 gram hoisin sauce
  • 2 green onions, finely sliced
  • 2 tbsp chopped coriander
  • ginger, peeled, grated
  • 1 tsp sesame oil

Nothing too complicated here either, just mix all the ingredients together:

Step 1) Start with the minced meat in a mixing bowl

Step 2) Chop the veggies into small pieces. You can use the whole buk choy (the white and the green part).

Step 3) put the filling on the dough, leave enough room for the sides to be put together

Step 4) start on one side and fold the dough together on the top

And almost done, just gently fold it into shape

This time we got about 39 dumpling out of the recipe.

Step 5) steam them in water with stock for about 10-15 minutes

Step 6) Ready to eat. Enjoy!

We have not mastered the level of Shandong mama yet, our favorite place in Melbourne to eat dumplings. Guess we just have to keep practicing…
