Recipe: making pasta from scratch

After the indulging days of Christmas it is time to return to the ordinary food. And for us, making our own pasta from scratch has become just that: ordinary food, which we all love to eat. The best part is that the children enjoy to help making it.

When we cook, we try to make as much from basic ingredients as possible. We started experimenting with this and find a lot easier then we thought. We also grow our own herbs to finish it off and we are currently growing our own zucchini, which is growing rapidly at the moment.

The sauce is home made as well, I will write a separate Blog post about that later.

Making the pasta

Making your own pasta is so much easier then you think. The only two things that you need to invest in is a pasta maker and special “00” pasta flour. Per 100 grams flour you add one egg, knead by hand, leave it in the fridge for half an hour and there is your dough.

This is the basic flour that you need, you can even buy it at Coles. One kilo makes loads of pasta! We use about 300 grams for one meal for four people.

You convert the dough into pasta by rolling it through a pasta maker. You start with the biggest thickness and every time you adjust the machine to roll it a bit flatter.

The trick is to fold the pasta three times the first couple times that you roll it through.

Oh, and the last part is also very important. Enjoy it outside whenever possible! Even if that means having to wear jackets.

Yes, if you follow our Blog, we did spent Christmas eve in a bathing suite on the beach, but we live in Melbourne, remember? Temperatures can easily drop by 20 degrees overnight, or in a split second.

    1. Have you ever tried making it? You are probably not going to succeed in getting the same one as she did, but if you practice hard enough you might get closer every time. We notice that we always improve a little bit every time we make it.
